Diego has always had feeding issues from the day he was born he was not able to latch on to breastfeed....I didn't give up trying for 4 months but it never happened. He eventually developed issues transitioning to table food...I thought I could fix it, feeding therapy is under the scope of an SLP's practice but it did not get fixed......We noticed that once we got Diego's sensory issues under control (not fixed but just better) we were able to work on feeding again. We did some direct 1:1 feeding with his OT and a group based sensory feeding program at a local university training program for graduate students in speech language pathology. It was a lot of work but we made good progress then we had him tested for food allergies....Well, we found out that Diego was highly reactive to many foods including some that he loved and were really good for him like apples and cauliflower. So in order for him to get better we had to restrict his diet!!! Diego has done well on his restricted diet but it has been challenging trying to introduce new foods so he will continue to have some variety in his diet. One of the mainstays of his diet pre-restriction was mac n cheese but the only kind he would eat was Michelina's microwavable wagon wheels and cheese. He loved this trans fat loaded stuff!! Well, we had to eliminate this nasty product from his diet. I tried to substitute it with healthier, organic versions that looked and tasted alot like Kraft mac n cheese....we might get a nibble here or there but that was it. I was recently feeling discouraged that we really have not added in any new foods lately so I decided to make homemade mac n cheese using wagon wheel shaped pasta that I found at Whole Foods. Diego was really excited about this and when he saw his dinner he started saying, "It's the wheel pasta!! It's the wheel pasta!" I was so encouraged but then he took a bite and said, " I don't like it." I couldn't give up....I encouraged him to take a few more bites....He did so and kept on taking more and more bites. The mac n cheese was a hit!! He told me that he likes it so much that he wants it for BREAKFAST and lunch tomorrow...... :)
