We recently made a trip out to our neighboring city of Dallas to a fabulous bakery dedicated to making delicious tasting bakery traditions for the gluten-free, dairy-free, allergy-free community here in north Texas. I share these bakers' passion full-on, as this is how my "kitchen-career" began - baking and cooking for families that had ingredient challenges. Visiting their friendly bakery made me a bit wistful and brought back some fond memories of not so long ago when I would spend my weekends in the bakery space, cooking until my fingers and back were sore and producing mounds upon mounds of dirty dishes .....
Oh Wait! Reality check! The dishes! The long weekends away from my family! Ah, yes, it is all coming back to me now. A fantastic memory and definitely SOME things that I miss about those bakery days, but I am so, so blessed to be able to help people in other ways now that can benefit other families without sacrificing my commitments to my own family. Things are just as they should be.
This bakery, Wholesome Foods Bakery, provides such a great product and a fantastic freedom for moms who don't have the time, skill, or patience to learn and navigate a gluten-free kitchen. Kuddos to Taylor & Anne for their dedication to a delicious and nutritious line of baked goods. It really makes my heart sing to know other moms in the community that are dedicated to the allergy-challenged eaters in such an awesome way.
Our drive to the bakery was just a little over an hour long. "Foxy", our new minivan, carried us there and back safely and soundly; and this week, we are able to enjoy delicious gluten-free, dairy-free, egg-free, soy-free, yeast & sugar-free bread. The best part is - I didn't have to bake this week!
This very morning, we toasted up our yeast-free, sugar-free, bakery-fresh slices. Hot from the toaster oven, I spread out a thin layer of our Earth Balance Soy Free "butter" on each slice (we're working towards a tolerance for Ghee , but not quite there yet) and then topped that with our favorite morning sprinkle, "Cinnamon Sprinkle". The kids love this universal mixture of yumminess, and I love giving them a special treat that is fiber-rich, immune-boosting, naturally yeast-fighting, low glycemic, and actually cane-sugar free (this is one of our allergies).
1/2 cup coconut crystals (by Coconut Secret)
1/3 cup unsweetened organic coconut flakes
2 tablespoons organic cinnamon
In a spice blender or food processor, blend together all these ingredients. Store in an airtight container in the pantry or fridge and use frequently ;o) Our favorite uses:
We "sprinkle" over our gluten-free oatmeal.
We "sprinkle" on our gluten-free toast.
We "sprinkle" on our gluten-free muffins.
We "sprinkle" on nut crackers and bake them to melt a bit.
We "sprinkle" on popcorn.
We "sprinkle" over nutbutter-topped rice cakes.
We "sprinkle" on banana slices.
We "sprinkle" in our rice cereal.
We "sprinkle" into nutbutters and mix it all together for a delicious apple dip.
